I heard this week that Matt Wilkinson has been appointed Creative Director of the new Healesville based, Four Pillars food range (think gin infused chips and other deliciousness!) and it made me think of the time I photographed him at his Pope Joan restaurant for Time Out.
Previously on Nicholson Street in Brunswick East the restaurant has since closed it’s doors after the landlord had other plan for the premises, but has now reopened for business in Melbourne CBD. I’m yet to try out the CBD incarnation of Pope Joan but I’m sure it will be just as great as the previous one, with a legion of loyal customers.
Matt is one of the nice guys in the hospitality scene and was a real gent, taking time from his busy schedule for photos and ensuring that I had everything I needed to photograph the restaurant, sending out dish after dish for photos.
With the shoot completed, it was time to sample a few of the dishes – I’m pleased to confirm that his banoffee pie is as delicious as it looks!
